Tired of the same old combo in the salad bowl? I was. Here’s an off-the-cuff variation that’s sure perked up my dinner plate.
1/4 red cabbage, thinly sliced or shredded
1 pkg. Olivia’s organic herbal greens (or your favorite mixed greens)
1/2 sweet red pepper, diced finely
2 carrots, shredded
1-2 stalks celery, chopped
1-2 tangerines, peeled, seeded, with sections cut into thirds
Assemble ingredients in large salad bowl and toss.
Dress each serving with a pinch of Trader Joe’s “Quattro Formaggio”. This is a shredded blend of parmesan, asiago, fontina and mild provolone cheeses. I love the zingey combination of the cheeses with the tangerine.
Top with homemade vinaigrette or Legere’s Nutritional Yeast Salad Dressing.
